CREAMY BEEF STROGANOFF

A rich and creamy meal that the whole family is sure to enjoy

SERVES 6

INGREDIENTS

  • 500g fettucine

  • 400g rump steak

  • 3 rashers lean bacon, chopped

  • 1 onion, chopped

  • 1 carrot, peeled and sliced

  • 2 garlic cloves, crushed

  • 200g button mushrooms, halved

  • 1 tbsp plain flour

  • 375ml can light & creamy evaporated milk

  • 2 tsp french mustard

  • 1 tsp soy sauce

  • ¼ cup tomato paste

  • Fresh parsley to garnish

  • Green salad or steamed greens, to serve

METHOD

  1. Cook pasta according to packet directions.

  2. Meanwhile, heat a frying pan over high heat. Cook steak for 3 minutes each side. Remove from heat and allow to rest.

  3. Reduce heat to medium and cook bacon and onion for 3 minutes. Add carrot, celery , garlic and mushrooms and cook for a further 5 minutes. Add flour and cook for 1 minute.

  4. Gradually add milk, mustard, soy sauce and tomato paste. Bring to the boil. Reduce heat and simmer, stirring occasionally until thickened.

  5. Slice steak into strips and add to pan.

  6. To serve, ladle beef mixture over pasta and garnish with parsley. Serve with a green salad or steamed greens.
