Bircher Muesli
This easy Bircher muesli can be prepared the night before for a nutritious breakfast packed with oats, fruit, nuts and seeds.
Serves 2–4
Ingredients
- 1 red apple, unpeeled
- ½ cup rolled oats
- 2 dessertspoons almonds, roughly chopped
- 2 dessertspoons pepitas (pumpkin seeds)
- 2 dessertspoons whole linseeds
- 2 dessertspoons sunflower seeds
- ½ tsp ground cinnamon
- 1 cup yoghurt, or ½ cup yoghurt and ½ cup apple juice
- Raspberries, plums or other seasonal fruit, to serve
Method
- Combine: Grate the apple and place in a bowl with the rolled oats, almonds, pepitas, linseeds, sunflower seeds and cinnamon. Mix well.
- Add the yoghurt: Stir through the yoghurt until well combined.
- Refrigerate: Cover and place in the fridge overnight.
- Adjust the consistency: In the morning, add a little extra yoghurt, milk, soy milk or apple juice if you prefer a softer consistency.
- Serve: Spoon into bowls and top with your choice of seasonal fruit.
Tip: The Bircher muesli will keep in the fridge for 2–3 days. The ingredients will continue to absorb liquid, so you may need to add a little extra yoghurt or milk before serving on subsequent days.
