This easy teriyaki chicken is a quick and flavour-packed meal served with brown rice and green beans – perfect for a simple weeknight dinner.
Serves 2
Ingredients
- 4–6 chicken thighs, cut into bite-sized pieces
- 1 tsp olive oil
- ¼ cup salt-reduced soy sauce
- 200 ml mirin
- ½ tbsp brown sugar
- 2 cups green beans
- 1 cup cooked brown rice
Method
- Make the teriyaki sauce: Add the soy sauce, mirin and brown sugar to a small saucepan. Cook over medium heat, stirring until the sugar has dissolved and the sauce has thickened slightly. Remove from the heat and set aside.
- Cook the chicken: Meanwhile, heat the olive oil in a frying pan over high heat. Add the chicken and cook for 8–10 minutes, or until browned.
- Add the sauce: Pour the teriyaki sauce over the chicken and bring to the boil. Stir to coat the chicken evenly, then cook for a further 4–6 minutes, or until the chicken is cooked through and the sauce has thickened.
- Cook the beans: Steam the green beans until tender.
- Serve: Divide the brown rice between bowls and top with the teriyaki chicken and steamed green beans.
